Freshly harvested Kokum fruits are Reddish Green in colour and turn into full red when fully matured. Purple in colour in a day or two. The fruit is juicy. It has very strong sweetish acid taste. (Konkan Amruta variety: pH value 1.81, Konkan Hatis variety: pH value 1.80). Normal shelf life of Kokum fruit is 4-5 days. It has sour taste.
